What's on my menu?-Week 2


I have not posted my weekly meal plan for awhile.  I know a lot of my readers like when I do that so I thought now would be a good time.  I always stick with my meal planning routine.  (and yes just like it says in that post...I have my meals planned out for the month)

All of my meals I try to make easy.  I also have a side vegetable and fruit with every meal.  If you have picky eaters then it is best to give 2 options of each fruit and vegetable.  I usually only serve what everyone in my family likes.  I like to switch it up between canned, fresh, and frozen.  Here is my next week's menu (starting Sunday):


Sunday: Roast.  We love having roast on Sunday.  Brown rump or chuck roast in crock pot (the more marbled it is the more it will fall apart).  The best way to brown the roast is to get a frying pan really hot.  Then place roast on frying pan until it starts lifting off the pan.  It should be pretty brown, but not burnt.  Do this on all the edges of the roast.  Place roast in crock pot.  Pour water in crock pot around the roast (only about a 1/2 an inch deep).  Then sprinkle Lipton Onion Soup Mix on the roast and in the surrounding water and add a few bay leaves to the top of the roast.  Cook it on low for about 2-2.5 hours if your roast is 1-2 pounds.  If you cook it this way it will be tender and it will fall apart when you break it.  We always have mashed potatoes and gravy and then pick a fruit for a side. 


Monday-Monday is our comfort food night.  My daughter picked out this week's meal for Monday and it is going to be Kraft mac and cheese.  I know....not the most yummy, but she loves it.  



Tuesday-Spaghetti and meatballs.  Of course serve with a veggie and fruit.


Wednesday-Breakfast for dinner: My husband makes the BEST french toast.  So that is what we are having.  No veggies here, but we will have some fruit.


Thursday: This night is our little family's tradition to get Chinese take out.  We have been doing this since Ryan and I were first married.  However, if you are looking for something to cook at home we really like the Chicken Fried Rice Chicken Helper. 


Friday: Chicken Alfredo Pizza.  So yummy.  We usually skip fruits and veggies on this one.  So make sure to have a little extra at lunch.  


Saturday: This is my date night with my handsome husband.  We will eat out, but if you are looking for something from home then make my Easiest Chicken Dinner recipe.  The veggies are in the dish, but make sure to pick a fruit.
